Khomwan Taengnin, sous chef at W Bangkok, is on his way to W Retreat & Spa Maldives where for one week from 3 to 7 July 2014 he will serve as guest chef and Thai food ambassador. While at the island holiday destination, Chef Khomwan will train W staff in preparation and presentation methods of Thai dishes and share knowledge of his native cuisine.

With the W Bangkok team since 2012, throughout the preceding decade Chef Khomwan gained extensive experience in the kitchens of numerous luxury hotels in Thailand e.g. Six Senses Hideaway Yao Noi and Banyan Tree Bangkok, working his way up from demi chef de partie to chef de partie and then sous chef. He likewise acquired international training and experience as apprentice at Hotel Silken Berlayamont in Brussels, Belgium, and he holds a Certificate of Participation for culinary work at the Royal Thai Embassy, Brussels.

Among Chef Khomwan’s duties at W Bangkok is banquet sous chef for the hotel’s main kitchen. He’s also responsible for creating special menus for events like gala occasions as well as ensuring food and service excellence at all venues, including modern all-day bistro The Kitchen Table.

During his week at W Retreat & Spa Maldives, the chef will assist kitchen staff in preparing distinctive Thai dishes. Highlights are to include:

  • Pla Grapong Nueng Manow – Steamed Sea Bass with Sweet Basil, Braised Chinese Cabbage and Chili
  • Gaeng Leung Yord Maprao – Coconut Shoot and Pea Eggplant Yellow Curry with Kanom Jeen Noodles
  • Pla Goong Yang – Grilled Prawn Salad with Lemongrass, Chili and Kaffir Lime Leaf
